Alma by Juan Amador - One Michelin Star European Restaurant

Alma by Juan Amador - Restaurant Sign

I never quite understood what is all the fuss about Michelin 1-star, 2-stars and 3-star restaurants until I dined at Alma by Juan Amador. I was happy enough with the Michelin Bib Gourmand stalls and restaurants but Alma but Juan Amador totally changed my mind about the Michelin-starred restaurants.

Alma by Juan Amador - Menu

Helmed by Singaporean Executive Chef Haikal Johari, Alma specialises in modern-European dishes with Asian influences. Alma offers a great value 3-course, 4-course and 5-course set lunch starting from only $78++ which is great for corporate lunches or a mid-week treat. We chose the 4-course Executive set at $88++ per person.

Alma - The Food

Alma by Juan Amador - Snacks Top View

The meal starts with three seasonal bite-size snacks to whet the appetite. The one in a bowl is matcha with uni (sea urchin). The matcha is not bitter which goes really well with the natural sweetness of uni. The toast on the left side is crispy brioche bread with foie gras and scallions. There is no gamey taste from the foie gras. The white chocolate cupcake-liner is edible and it contains flower-infused cream. The cream is delightfully light with hints of flower fragrance.

Alma by Juan Amador - Potato Bread

Alma’s famous potato bread arrived in a cute wooden box with bordier smoked butter in an accompanying dish. The potato bread is still warm and it tastes heavenly when paired with the smooth butter that comes with a hint of smokiness.

Alma by Juan Amador - Bafun Uni

For starter, I ordered Bafun Uni (top-up S$39). This is a cold dish, with cold angel hair pasta topped with amur cavier and lobster meat. The sweetness of fresh cavier and uni (sea urchin) pairs really well with the cold angel hair pasta.

Alma by Juan Amador - Boston Lobster Cappelini

I chose Boston Lobster Cappelini for appetizer. The pasta is cooked in dashi broth and presented with dashi foam. Even though there’s chilli, I can hardly taste any spiciness. The lobster meat was firm and sweet.

Alma by Juan Amador - Kumamoto A5 Beef Top View

It’s not everyday you get to try Kumamoto A5 Beef [top-up S$58]. The chunk of kumamoto A5 beef is accompanied by chervil root, vidalia onion and perigourdine sauce. Everything is arranged so artistically, it looks like a work of art. I asked for medium-rare doneness for my beef and just look at that beautiful pink centre. The beef is cooked perfectly and it is so tender while the accompaniments gives the meat different layers of flavor and texture.

Alma by Juan Amador - Apple Tart Tatin

It’s either Cata Coffee or Apple Tart Tatin [top-up $19]. Since I don’t drink coffee, I ordered the Apple Tart Tatin. It is like a mini apple pie, served with Hokkaido milk ice-cream and almond slices. It is comforting and delicious.

Lastly, you will end your meal with a piece of Alma’s Petit Four. Canelé is a small French pastry flavored with rum and vanilla with a soft and tender custard center and a dark, thick caramelized crust. Alma replaces the custard inside with palm sugar which gives it an intense coconuty sweetness that is addictive.

Conclusion

Alma by Juan Amador - Interior

Alma places emphasis on the quality and not quantity. The portions are small but the presentation and use of premium ingredients makes one appreciate the food even more. It’s slightly pricey but you won’t regret it.

PAUL

PAUL is a renowned family French bakery and patisserie founded in 1889. Bringing with them them the fine tradition of passion for food and French traditions, PAUL gives Singaporeans a glimpse into French culture and tradition through the delicious and visually-appealing pastries and food.       PAUL's Hot Chocolate is not as creamy as I would have liked it but every last drop is made with good-quality cocoa powder.     Lemon Tart With Meringue is not exactly my favourite dessert, but it looked so pretty that I decided to give it a try anyway. However, it proved to be too sour for my palette even with the beautifully flamed meringue.    Croque Madame is croque-monsieur (grilled ham and cheese sandwich) topped with a fried egg. Emmental cheese, cream and ham is sandwich in pain de eie and toasted till a rich golden brown colour. Topped with a fried egg with runny yolk, every bite is filled with delicious goodness.   Address and telephone n...

Korean bingsu is a popular Korean dessert comprising of ice shavings and various ingredients such as sweetened condensed milk, fruit syrups, fresh fruits, Korean rice cake and ice-cream. Bingsu is all the craze in Singapore now and Korean bingsu cafes are popping up everywhere like wild mushrooms.                            Besides bingsu, this dessert cafe also serves usual cafe offerings such as coffee and tea. I have been told that their Signature Oven-Baked Honey Bread is very good. The flavours include Strawberry & Chocolate with Ice Cream, Banana & Chocolate with Ice Cream and Green Tea with Ice Cream.     I was told that   Mango Cheesecake Bingsu   is one of the most popular item on the menu. Oh my, it is a sight to behold! A bowl of shaved ice is topped with sweetened condensed milk and freshly-cut m...

Grandma's - Authentic Singapore Food

Grandma's has been around for quite a while now but I only got the chance to try their food recently when the third outlet opened in Suntec City.        I remember having these prawn crackers when I was little. They are so easy and good to eat, I can finish a whole package of this in one sitting.     I don't usually order Malay food, but the Nasi Bukhari looked so good in the menu, I thought I will give it a try. Fragrant yellow turmeric rice is served with golden brown chicken leg which is crispy on the outside and tender on the inside. Prawns were fresh and succulent but I don't really like the sauce the prawns are cooked in. What really amazes me about this dish is the beef rendang.          I never knew Bo Bo Cha Cha is so such a delightful dessert until I tried it here at Grandma's. The warm and thick coconut tastes so good with chunks of sweet potato and yam. This is definitely comfort food that warms the heart.   Gr...
